So 3 years ago, I had a co-worker that said when we have a our first big revenue day we will open this bottle of wine. Things got busy quick, time went on, he left the company, and we never had the bottle. I was leaving that company and cleaning out my office and found the bottle. I took it home with me and added it to the collection. We have not done anything special with it.

First, is it worth drinking. Second, is it safe to drink. LOL. Should I just toss this thing or drink one day.

    You’re in luck, I have actually had that exact bottle recently. Beautiful stuff and the perfect time to drink it.

    3 years in an office is not ideal storage, and that color is a good bit darker than the bottles I’ve had, so it may be somewhat dead, but Sauternes is hardier than most wines so there’s a decent chance it’s still pretty good. Even if it’s a bit off, it may still be the best wine you’ve ever had.

    In terms of safety, zero chance it’s dangerous; the alcohol and sugar in wine prevents anything harmful to humans from happening. This wine, in particular, was designed to age this long (and even longer.) Please drink it, and come back and post your tasting notes!

    Oh, and to prepare you: this is a dessert wine, so it will be sweet. I wouldn’t necessarily recommend drinking it with most dinners. Drink it with scallops, or foie gras, or a good quality blue cheese. Or, just on its own!
