

NY Strip. Did a 1 hr dry brine, 15 minutes at 300°F, 2.5 minutes on each side in the pan, 30 seconds on the fat to render that shit, finished with a butter baste post haste. This was the best steak I've made to date. 10/10 wish I could've smashed twice.
