I’m not sure on your process but a tip for more overall flavor – sear the chicken in a hot hot pan, get lots of colour on it, then remove it from the pan and add the veggies in. Cook until ~70% done, add the chicken back, add the sauce, and reduce to finish! (Plus add any garnishes you’re adding, e.g. green onions, sesame seeds, etc.)
Can’t go wrong with chicken, veggies, and rice though! Classic!

You could totally double the veggies- there’s only 2g fiber in the recipe you linked
