










Winter 2025. Truly one of the best fine dining experiences out there right now. Stephen Gillanders and company are not afraid of using spice as a component of their dishes. Hits included the trip of surf dishes, the braised beef breast, arroz caldo, torrijas, and the pavlova. There truly wasn’t a single miss. Only knock would be that the restaurant seems a little dim. Other than that, the atmosphere and service were spectacular. Also soooo much food for 198. Was absolutely worth it. If you are thinking about coming you should absolutely do it, as I guarantee when they get a star they will increase prices.

Chicagoan here, have not been yet (upcoming reservation next month) but your thoughts echo literally everything I’ve heard from dozens of friends and acquaintances who have been. Glad to hear you enjoyed.
Nearly every sauce is orange? The colors look somewhat one note and the dishes seem quite meat centric for my liking (with few vegetable accompaniments and the same? orange sauce).

We’ve got a few places on our “to-go” list and I’m definitely tempted to move Valhalla up a placement or two.
Did you do any of the beverage packages?
I went maybe a year or two ago when they were at the TimeOut Chicago location. Their octopus was perfect and I liked all their dishes. It was when they did unlimited dessert too but I don’t like cheese with my pies or dark chocolate.
I’ll keep banging the drum for Valhalla – amazing restaurant and special staff!
They did a pop-up tasting in the Detroit area right around when then opened. I thought everything was delicious. Looking forward to trying it next time in Chi-town.
