Chocolate tahini cookies really are the dream. The tahini is nutty and the chocolate is well, chocolatey. Making these the most perfect cookie! Plus, they are quick and easy to make.
To make these chocolate tahini cookies you will need:
113g butter (melted)
150g dark brown sugar
1 small egg (~25g)
9g vanilla extract (2 tsp)
120g tahini
155g all-purpose flour
2.5g baking soda (1/2 tsp)
1.5g salt (1/4 tsp)
115g dark chocolate (chopped)
Sesame seeds (for topping, ~10g)
Flaky sea salt (optional, for topping)
This will make about 9-12 cookies. Preheat your oven to 175°C (350°F) and line one baking tray with parchment paper.Whisk together the melted butter, brown sugar, and granulated sugar in a large bowl until smooth. Add the egg, vanilla extract, and tahini. Whisk until fully combined.
Add the dry ingredients to the wet mixture, folding until just combined.Fold in the chopped dark chocolate and rest in the fridge for 30 minutes up to overnight! Scoop the dough into balls (about 2 tablespoons each) and place them on the prepared tray.
Dunk each into some sesame seeds and a pinch of flaky sea salt if desired.Bake for 12–15 minutes or until the edges are set and the centres look slightly underbaked.Allow the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
