The Sarakostiana
Greek traditional Lagana, Lagana is a type of flatbread that is eaten in Greece on Kathara Deftera ( clean Monday) and during the lent, it marks the beginning of the 40-day fast, which ends on Easter and this is the easiest and most authentic recipe you will find! ⚫️ ingredients:
– 6 cups all purpose flour or bread flour or mix
– 3.5 cups lukewarm water
– 2 packs dry yeast
– 2tbsp sugar
– 1tsp salt
– 2tbsp tahini
– olive oil as needed
⚫️ instructions:
– in a bowl add the flour, the salt, the sugar and the yeast and mix, then add the tahini and water and mix very well either with your hands or with a wooden spatula until you get e very sticky dough
– cover and let rest in a warm place for 20 mins and then stretch and fold the dough to help activate the gluten, that way also locks more air bubbles into it and becomes fluffier, repeat the same process of stretching and folding for about 4-6 times every 20 minutes, after the last fold, cover and double even triple the size
– when has doubled add some olive oil over the counter to make it easier to work with the dough, cut in half and place it over a pan with parchment paper spread with your fingers same as focaccia and create a 2 inch thick dough, brush some sugar water and sprinkle some sesame seeds and bake at 400F ( 200C) for about 25 mins or until is perfectly golden brown
– let cool over a rack and enjoy as you wish
