INGREDIENTS
1kg (5 cups) granulated sugar
300ml (1 1/4 cups) water
3 tsp lemon juice
600ml (2 1/2 cups) water
125g (1 cup) cornstarch
1 tsp cream of tartar
1 tsp vanilla extract
1 tsp food coloring
125g (1 cup) powdered sugar
25g (1/4 cup) cornstarch
METHOD
1. In a saucepan add sugar, 300 ml water, and lemon juice, bring to a boil, and cook for 5 minutes.
2. In another saucepan add 600 ml water, 100 g cornstarch, and 1 tsp of cream of tartar, mix well then bring to a boil until starts thickening.
3. Now, little by little, pour the sugar syrup into the saucepan with the cornstarch mixture inside. In the meantime, continue to mix and cook everything over low heat for about 40-45 minutes, stirring continuously.
4. After that turn off the heat and add food coloring and vanilla extract.
5. Transfer to the pan and let it cool completely, then refrigerate for at least 6 hours.
6. Cut into squares.
7. Mix cornstarch with sugar powder, and dip lokum squares into the mixture.
