The highly marbled piece would be outstanding for tacos. As far as eating a steak however, it would be too rich. I’ve eaten a 1lbs BMS 12 Wagyu ribeye before, and felt like death. Having to finish the half my wife couldn’t handle could have been the end of me.

Left. I have some A5 in my freezer but I can only eat about 6 ounces at a time. Even then I need a few months between cooking it

I prefer the left. I live in Japan and have constant access to cheap waygu but always end up eating leaner New Zealand or American beef. At first I ate nothing but the waygu but the oil and richness slows me down a bunch.

apples and oranges. that japanese beef is good when you’re in the mood for that. the regular NY is great for other times. personally can’t eat the japanese beef often but really enjoy it when I do. I cook it teppan style, griddle for a minute or two on each side and then slice and sear a bit more.

Right. Even if I could only eat half of it, it would be better than trying to choke down that steak on the left. I bought a couple of Select grade strips a couple if weeks ago because they were what seemed at the time a really good deal, but we could barely choke them down.

I made this very comparison one month ago for my birthday. The Wagyu was incredible, absolutely transcendent, but I just couldn’t eat as much of it as I wanted to. The richness is overwhelming. On the other hand, USDA choice is totally acceptable and easy to eat, but isn’t special in any way. As others have said, I’d go in the middle. USDA prime is easy enough to eat for a daily driver steak, but has the richness to beat out a cheaper grade.
Still, between the two, I’d take choice. Sounds crazy, right? I want something that I can eat a lot of. A5 is a once or twice a year thing.

I love steak, rare and blue is my go to (depending on the cut sometimes medium rare). But I never want a full slab, I’m good with a few bites. Plus I adore fatty bits, the fat cap being my favourite part. So top for me.

The waygu piece is more fat than meat. Not necessarily i bad thing if you love rendered fat like me, but….. like that old lady said “where’s the beef”
