It’s a little different take than my mother’s version. But looks yummy.
She put the shredded cod into the sauce and served it as a sort of gravy over boiled potatoes and topped with diced raw onions. No baking. I didn’t appreciate it as a kid but I love it now. The fish used to come in a little wooden box. I remember using them as a beds for my dolls. Thanks for the post. It brought back good memories.

Salt cod is something I used to see in grocery stores and just don't see anymore. It used to come in boxes with paper like a shelf stable dry good.

Baccala (as the Italians call it) was cheap peasant food once upon a time. It kept poor people alive, especially during wintertime. Now it costs a fortune.

Great video, Everything looks YUMMY. I use salt cod to make fish cakes but have been soaking them in a metal pot, I will switch to a glass pan. I only soak for a few hours before mixing the fish with cooked potatoes to make patties. You soak the fish for 3 days in the video. So when you eat it the salt is all gone and the taste is different? I found this very interesting. Thanks

Got a question but please do not laugh at me. I was raised in the north of Quebec where salted cod wasn’t a thing at all. Actually eating fish was almost like a punishment when I was a boy. I learned to love fish as time went by. But why would we use salted cod, remove the salt then cook with it instead of buying just plain cod? Is the taste so much different?
We grew up with salt cod. Baccala. Never know Costco has some. 😮. The way you made it in sauce is not traditional for us but close. Typically we boil potatoes and some Tomato sauce. We sauté garlic onions add potatoes and some of our homemade sugo. Then part way when potatoes are cooked we place the cod in there the fish soaks up the potatoes and sugo taste. DELICIOUS! The tail pieces you mentioned we put in flour and pan fry until crispy. Your recipe very nice 👌👌👌👌
