Ingredients
– 2 chicken sausages
– 2 c chopped cauliflower
– 3 sprays olive oil
– homemade light pesto (ingredients below)
– salt and pepper

Pesto is so easy to make, freezes for a month, and can be used so many ways!

In a chopper, blender, or food processor blitz:
– 3 c packed fresh basil leaves
– 2 garlic cloves
– .5 c pine nuts
– .5 c grated parm or nutritional yeast
– .5 c extra virgin olive oil
– water, pasta water, or veggie broth to thin the pesto to your preference
– .25 t salt
– .25 t black pepper

For recipe:

Pre- heat oven to 400°F
1. Chop fresh cauliflower, spray with olive oil, season with a bit of salt and pepper. Roast until desired brownness.

  1. On a separate pan, place chicken sausages (like some holes) and place in oven. Remove when inside, center temps at 165°F.

  2. Place cauliflower in a bowl. Slice sausages and add to dish. Top with 1.5 T pesto.
