Saturday prep: High Protein and veggie packed quiche

    Recipe:

    pre-heat oven at 180°C.

    Mix:
    – 10 eggs
    – 300gr cottage cheese
    – sliced white onion + sliced mushrooms: both sauteed in olive oil, then finished with minced garlic, seasoned with salt, black pepper and thyme.
    – frozen broccoli: microwaved for 4min to thaw, drain the water and cut in to smaller pieces.
    – frozen corn + frozen bell peppers: microwaved for couple minute to thaw, squeeze out the water.
    – salt
    – black pepper
    – chilli flakes
    – thyme
    – oregano

    Bake for 40min.

    PS: I didn’t measure the veggies, quantities were random, a handful or two of each.
