Ingredients:
• 1 package mild Italian sausage
• ½ onion, finely chopped
• Minced garlic (a few heaping spoonfuls)
• Fresh basil (plus dried basil seasoning)
• Italian seasoning (to taste)
• Garlic powder (to taste)
• Salt & pepper (to taste)
• 1 tsp flour (to coat sausage)
• 1 container (32 oz) chicken broth
• 1 can crushed tomatoes (high-quality brand)
• 1 can petite diced tomatoes (with juice)
• ½ cup heavy whipping cream (eyeball it)
• Parmesan Romano cheese (a good handful)
• 1–2 bags cheese tortellini (various sizes work)
• Fresh spinach (torn into smaller pieces)

Instructions:
1. Cook the Sausage & Aromatics:
• Brown the Italian sausage in a large pot over medium heat.
• Add chopped onions and cook until softened.
• Stir in minced garlic and cook for another minute.
• Season with fresh basil, dried basil, Italian seasoning, garlic powder, salt, and pepper.
• Sprinkle in flour and stir to coat the sausage.
2. Build the Soup Base:
• Pour in the chicken broth and crushed tomatoes.
• Add grated Parmesan Romano cheese and stir well.
• Stir in the heavy whipping cream for a creamy texture.
3. Cook the Tortellini:
• Add tortellini (any size works) and stir gently.
• Let the soup simmer for about 20 minutes, stirring occasionally.
4. Add the Final Touches:
• Pour in the can of petite diced tomatoes (with juice).
• Tear fresh spinach into smaller pieces and stir it into the soup.
• Let the spinach wilt down completely.
