Do You Love… Garden Harmony: Sautéed Vegetables with Potatoes and a Yogurt-Dill Sauce
Ingredients:
• 2 medium potatoes
• 1 carrot
• 1 red bell pepper
• 1 green bell pepper
• 1 small zucchini
• 2-3 tbsp olive oil or vegetable oil
• Salt and black pepper to taste
• 1 tsp dried savory
• 1 tsp dried garlic (or 1 minced garlic clove)
For the sauce:
• 200 g strained yogurt
• 1 bunch fresh dill, finely chopped
• 1 garlic clove (minced)
• Salt and black pepper to taste
Instructions:
1. Peel and dice the potatoes. Lightly fry them in a pan with a bit of oil, then cover and let them cook until tender.
2. Chop the remaining vegetables into medium-sized pieces.
3. In a separate pan, heat some oil and sauté the vegetables separately – first the carrot, then the bell peppers, and finally the zucchini.
4. Combine all the vegetables in one pan, season with salt, black pepper, dried savory, and garlic. Stir well.
5. For the sauce, mix the yogurt with the chopped dill, minced garlic, salt, and black pepper.
6. Serve the warm vegetables with the refreshing yogurt-dill sauce.
