The bulk of this is super healthy, with an optional crispy cheese-fronion topping.

I used 1.5 boxes chick pea noodles from Trader Joe’s (precooked before baking), and bulked it up with loads of veggies (stir fried in advance onions, celery, broccoli) and a bad of frozen peas. 2 containers of cream of mushroom soup from Trader Joe’s, a dash of milk to thin and spread the sauce. 3 cans tuna in water, drained. Salt, pepper, a dash of Worcestershire sauce.

I tossed all of the above together and put in baking dish. For a more fattening but still thinly layered topping (so not breaking the diet too hard), I put a bunch of thinly sliced fresh jalapeños on top, fronions, and sharp cheddar, baked and the topping gave it an awesome crunch.

I made this now 2 weeks in a row and it’s a killer volume meal (a bunch of meals rather, as it’s huge).

It only took about half hour to throw together and 40 minutes to bake.
