Kansas City Strip with Roasted Potatoes and Garlic Green Beans
Absolutely delicious. I haven't made a KC strip in a while but saw these at the butcher and couldn't resist. Reverse seared and left unsliced. Served with Cajun seasoned baby potatoes and garlic green beans.

Bro, I’m starting to really, really see the appeal of reverse sear. Every single reverse sear I see is perfect crust. Amazingly juicy-looking.
And it makes me slightly mad, because I want natural chunk to be the clear winner.
