RECIPE
Ingredients: (makes 4-6 depending on size)
Burrito –
4-6 large tortillas
Salsa –
2 tomatoes, diced
1 red onion, finely diced
1/2 cup corn kernels, thawed
1 cup fresh coriander leaves, finely chopped
Juice of 2 limes or lemons
Guacamole –
2 avocados
1 tsp salt
1 tsp black pepper
Juice of 1 lime or lemon
Fillings –
1 + 1/2 cups of rice
1 can refried beans or black beans
150g grated vegan cheese
Shredded cos lettuce (can leave out if toasting burritos)
Slice pickled jalapeños (optional)

Method:
1. If cooking fresh rice, cook this first. (If using leftover rice, microwave at the end).
2. Prepare salsa ingredients, add to a bowl, stir to combine and then set aside.
3. Make guacamole by adding all ingredients to a bowl and mashing with a fork.
4. Grate vegan cheese, shred lettuce (if using) and chop jalapeños (if you like it spicy).
5. Heat refried beans in a pot or microwave and then heat leftover rice or add freshly cooked rice to a serving bowl.
6. Built burritos by layering ingredients on a large, warmed tortilla.
7. Roll burrito, by folding from the bottom to the top and then each side. Pull the mixture down to compact it then continually rolling tightly all the way to the top.
8. You can toast these if you like or eat them fresh. Can be stored in the fridge for a couple of days or kept covered in the freezer for another day.

  1. Mmm looks delicious! I have been meaning to make burritos to freeze for lazy dinners. I think I'll make a few of these tomorrow.
