Here’s what I think, is the BEST SALAD DRESSING and MARINADE for roasted veggies to whip up in a flash! It’s so versatile, you will want to have this in your fridge all summer long.
VINAIGRETTE WITH MUSTARD & HERBS (Makes about 250 ml)
🌿 125 ml (½ cup) olive oil
🌿 60 ml (¼ cup) apple cider vinegar
🌿 20 ml (4 tsp) wholegrain mustard
🌿 30 ml (2 tbsp) honey
🌿 30 ml (2 tbsp) chopped fresh herbs like thyme or Italian parsley
🌿 5 ml (1 tsp) finely grated lemon rind
🌿 salt and pepper to taste
WHISK the oil, vinegar, mustard and honey together until well combined. Stir in the rind and herbs and season to taste.
