I bought some 10-year-old active starter on fb marketplace over the weekend and immediately started on my first loaf! I was worried I’d be under proofed because I only let the dough bulk ferment on my counter for 5h and the recipe calls for 6-12, but I think the crumb structure looks good! Maybe the extra long cold proof in my fridge helped it out a bit? It certainly tastes delicious either way!! I was so eager to try I only let it cool for 2.5h before cutting into it lol

475g bread flour
100g active starter
375g water
10g salt
Mixed ingredients, let sit for 30 min
3 sets of stretch and folds 30 min apart
Bulk fermented on counter 5h (kitchen runs warm 72-74°F)
Cold proofed in fridge 17h
Baked in preheated dutch oven at 500 for 20 min
Removed lid and baked at 500 for another 20 min
