Today’s recipe is delicious … Sourdough Discard Fried Doughnuts with Honey Syrup (Greek Loukoumades)!

Loukoumades are a beloved Greek dessert – crispy on the outside, airy on the inside, and drenched in honey or syrup. These golden-fried dough puffs have been a staple in Greek cuisine for centuries, tracing their origins back to the first Olympic Games in 776 BCE, where they were given prizes to victorious athletes. Today, they remain a favorite treat at festivals, family gatherings, and especially during Greek Lent, when we abstain from meat and dairy.

Ingredients:
For the Doughnuts:

3/4 cup of water
1 and 2/3 cups of all-purpose flour
1/3 cup of sourdough discard (unfed sourdough starter)
1 teaspoon of salt
1 teaspoon of date sugar or honey
1 teaspoon of tapioca starch
Oil (avocado, olive, or other) to fill a frying pot at least an inch in height
Ground walnuts, cinnamon, jam, or honey for topping (optional)

For the Syrup:

1 cup of water
1 and 1/2 cups of date sugar
Peels of one orange
1 cinnamon stick
1/2 cup of honey
