Thin steaks are an art. Would y’all call this medium rare or medium?

    Some is medium some is rare but mostly medium rare

    Yeah, its definitely on the rarer side of medium rare.
    I’d tear it up though.

    You have a spectrum there (which is to be expected). It ranges from medium rare to blue.

    I agree on cool medium rare. Great job getting some color and flavor on that without cooking it

    Many people think medium rare is too rare because most places cook medium rare to the medium end or even just medium because a slightly overcooked steak comes back far less often than an undercooked steak.

    But honestly, looks like a perfect medium rare to me. Some thin steaks are even better at about medium though but this looks tender to me!

    I’d also call it a damn fine job on such a thin steak.

    I genuinely struggle at cooking thin steaks, I never can get a good crust while keeping it from over cooking.

    I use high heat on a cast iron but I’m never consistent, tips?

    This is the issue with thin steaks. Looks like it ranges from medium to rare in some places.

    I don’t complain. I will eat whatever steaks you make🫡.
    But seriously looks great! I usually go for a rare if they have a lot of fat sometimes with the lean steaks rare is too chewy.

    The most important question- do YOU like the way it looks? Did you like the way it tasted? I’ve cooked steaks with no pink left that were tender and juicey. I’ve been served rare (my preferred target) that were rubbery with bland meat taste.
