Creamy Tortellini Soup – Recipe Below – this is the best quick and easy dinner when you need something to cook fast after work. Serves 4

2 tbsp olive oil, plus extra fir drizzling
3 sausages, skins removed (200g total)
1 onion, finely chopped
½ a bulb fennel, finely chopped
4 cloves garlic, finely chopped
2 tbsp tomato puree
1 tsp dried oregano
150ml white wine
1 x 400g tin chopped tomatoes
1 litre chicken stock
300g pack fresh tortellini
150g spinach
100ml double cream
Parmesan to serve
Salt and pepper

1. Heat the oil in a large pan over a medium heat. Rip the sausages into little meatballs, straight into the pan. Leave for a minute to get some colour on them. Mix well and cook, stirring occasionally, for 5-6 minutes until golden. Remove the sausages with a slotted spoon and set to one side.
2. Add the onion and fennel and a pinch of salt and pepper to the pan. Mix well and cook, stirring occasionally, for 5-6 minutes or until a little golden. Add the garlic, tomato puree and oregano and mix well. Once you can smell the garlic, add the white wine to de-glaze the pan. Mix well and cook for 2-3 minutes until the boozy smell has gone.
3. Add the chopped tomatoes, chicken stock and sausages. Add more salt and pepper and stir together. Bring to the boil. Cover, reduce the heat to low and cook for 30 minutes so the flavours can develop.
4. Crank up the heat and get the soup gently bubbling. Add the tortellini, spinach and double cream. Mix well and cook for 1-2 minutes or until the tortellini is just cooked. Check the seasoning, adding salt and pepper to taste and serve immediately.
