My mother gave me these shallots from her garden at the end of summer.

Are they too old? I feel they look like theve started to try and sprout and might be fridge burnt.

    I would use those as is. And have many times. Yeah, they’re a bit past mature, but they’re not spoiled.

  3. Yellowing rings is a sign of an onion showing its age, just toss those parts out and the rest is fine. Kinda like an apple that starts to brown up in some spots when it gets old. Cut those parts off and it’s fine

    If the onion starts going soft and browning then it’s not safe to eat. Shallots especially will tend to sprout when they’ve gone past their expiration

    they look fine? obviously they’re starting to think about becoming plants again but that’s still perfectly delicious
