RECIPE:
1 Large Yellow Onion, Diced
1 Tbs Olive Oil
3 Cloves Garlic, Minced
1 Tsp Garam Masala
1 Tsp Za’atar
1 Tsp Chili Powder
1/2 Tsp Paprika
1/2 Tsp Cumin
1/2 Tsp Red Pepper Flakes
1/2 Tsp Curry Powder
1 Tsp Salt
1 Tsp Black Pepper
15 Oz can Tomato Sauce
1 Cup Chicken Stock
2.5 Lbs 93% Lean Ground Turkey
4 Bell Peppers, Hollowed Out and Cut in Half

Preheat your oven to 350 F. Add the olive oil and onion to a saucepan and cook over medium heat until translucent, around 8 minutes. Add in the garlic and all the spices, along with the salt and pepper, and stir and cook for one minute. Add the tomato sauce and stock, stir and bring to a simmer, then simmer for 5 minutes.
Reserve 2 Cups of the sauce, then mix the rest of the sauce with the ground turkey and evenly divide the mixture into the bell peppers. Pour the rest of the sauce over the peppers and bake for around an hour, or until the internal temperature is 165 F. Serve with rice.
