    Ok ok…7 hours plus 2.5 hours rested in a cooler =) I posted this recipe last night along with my rub and Carolina vinegar sauce (a.k.a. the best stuff you can possibly put on a pulled pork sandwich).

    I would add another big chunk of hickory to the lit coals to get it going and also add a water pan under the roast. Looks good

    I learned a couple great tips from your video:

    – the ball of foil to weigh down your grate probe is simple and brilliant. I lost my clip so I’m always trying to tie it to the grate with pieces of copper wire. 

    – putting the roast into an aluminum pan during the wrap helps retain those juices! I always just wrapped the whole thing in foil so I lose them in the grill or during the unwrap. I’m sure pouring it back over the pulled meat does wonders for adding flavor.

  6. Probably my favorite thing to cook slow on the Weber. Cheap and everyone loves it. I usually put out BBQ sauce and it’s so good without that no one touches it.

    Get a shaker for that rub and use a drip pan.
