Pastéis de nata (pastel de nata) also known as Portuguese custard tarts is a traditional pastry made from a very special buttery laminated dough similar to puff pastry and filled with a sweet egg custard flavored with lemon and cinnamon.

These custard tarts are ultra crisp and crunchy and the filling creamy and rich. The tops are always shiny and blistered and the pastry deep golden brown. Perfect with a morning or afternoon coffee.

I learned Russian at school and university so I’d always known about Russian dark rye bread, the one saving grace of the Soviet Union, but unobtainable here in Australia. Now I make it every 7-10 days and use some of it to make kvass, which is also delicious, don’t know why no one sells it here. The dick pic is undoubtedly the secret to a successful borodinsky loaf, I think of you every time I do it… I’ll be making pasteis de nata next weekend. Thanks and cheers.

  2. I may have gained a pound watching this one.
    When my grandmother made strudel, she used two rolling pins.. a marble one for the dough and a wooden one for the butter.
    Similar pastry, right?

  3. Pavlova was created as the dish we know it with meringues is Australian, NOT New Zealand, they original dish called pavlova was more a Blancmange. Pavlova was created in Perth a full 6 months before the ballerina went to New Zealand.

  4. Is that Greta popping up? Nice, all the "secrets" in one recipe. This is gourmet Pasteis de Nata. The "puff pastry" is with soft butter and the custart has cream (Nata) which is rare on commercial ones. I like the pizza stone tip. Thanks.
