I’m sure it tastes good but it looks like you’ve eaten an avocado and threw up

I thought that was matzo stuffed into leaf debris in a gutter

  3. Lemon juice can sometimes brighten it
Or make it look worse but taste better w balsamic vinegar on the side

I’m wondering if maybe it’s a lack of nuts or cheese? I find blending with parm & pinenuts really helps brighten up the green !

Edit: I have made nut free pesto and have no issues keeping it green with proper amounts of garlic, parm, & olive oil. Making sure to blend into a creamy consistency is key too! And to add a bit of extra green, try a handful of arugula or spinach 🙂

Blanch basil it will help keep the green

I guess off topic sorta have you ever made a basil and pesto hummus?

It seems like the basil is getting oxidized somehow.

Chill your immersion blender blade before blending.

You have to blanch the basil. 👌. That’ll fix it.

use a mortar and pestle. That is the trick

You wouldn’t have happened to put garlic and lemon juice in it, would you?

Are you over processing the basil/pesto? Could it be getting whipped a bit too much and the air is oxidizing the pesto? We make it, and seal it immediately after making in an air tight container. The top darkens like this but underneath is green.

A squish of lemon juice will help prevent browning.
