

First shot at Beef short (finger) ribs was a success! Simple Rub of 2 parts BP~1 Part Kosher~1/2 Part Garlic~1/2 Part Paprika…7.5 hours @250 spritzed every hour with Beef Broth/Worcestershire mix…no wrap..pulled @203…ends were a tad dry…centers were near perfect…now on to a better slab of ribs…we sell 4/5 bone Prime Dino Ribs at work…

They look delicious.
I usually do Dino ribs for beef ribs and when I do I like to smoke them individually cut, not in the rack. You should try that out
