  2. This looks so good and I will be making as soon as I restock my lentils.

    I save the chickpea liquid and use it in baking as an egg replacer. 1 T = 1 yolk, 2 T = 1 egg white, 3 T = 1 egg. ❤

  3. I've been making lentil stew for awhile now, but without the chickpeas and some of the spices. I will try this combination, as it sounds and looks terrific.

  4. A bit of lime juice and cilantro would jazz this up even more. Loads of plant protein here, I'll definitely make this one.

  9. My thoughts, for what they're worth: This is a meal in itself that older men like myself should eat more often. Tomato prostate health; the legumes and rice make a complete protein. Myself, I would omit the vegetable broth unless you're making it yourself. Packaged vegetable broths are loaded with sodium and are mostly ingredients you want to avoid. I would up the tomato content to compensate. I would also rather use fresh tomatoes than canned. Just dice several Romas and add them when you add the vegetables and let them cook for about 5-10 mins before adding the lentils, then use water instead of broth. I would also use kidney beans instead of chickpeas. I think they go better in this type of dish.
