I started my deficit about 2 months ago, and I have lost 15 pounds.

I feel physically great. I eat lots of protein and fiber, and a good amount of fat, so I'm not hungry unless I'm having a meal way later than usual. I drink lots of water and almost no booze.

I don't feel like the 700cal deficit has been a major crazy change or anything, its been an easy adjustment and I'm very content with my daily intake.

My starting weight was 255 and my goal is to get to 140ish which is right in the middle of the healthy range for my height & age.

I feel like the 700cal deficit is going perfectly fine, but I saw some stuff online saying that doing a deficit of more than 500cal can be bad, that you can lose too much too fast or have health issues from too big of a deficit, so now I'm wondering if I should make an adjustment and go to just a 500cal deficit. Is 15 pounds in two months too fast? Is a 700cal deficit a bad thing even if I feel fine/good on it?

Oh I should add, I am not insanely rigid with it, if I happen to be extra hungry one day (or I just want to eat a sleeve of girl scout cookies while stoned), I do, and on those days obviously I’m in a much lower deficit or even at my maintenance cal count. I usually have a day like that once or twice a month.

I’m not being nutso and cutting out all sweets or carbs or anything, just doing everything in moderation and focusing on adding in protein, fiber, and veggies everywhere I can.

As long as you don’t lose more than a pound per week, you should be fine. Also, you just recently started, a lot of the weight lost is water and glycogen. Track your weight every week and see how much you are losing and adjust accordingly.
