Avgolemono soup is kind of like a Greek chicken noodle soup. It’s a creamy tart and delicious comfort food that will keep you begging for more.

What’s your favorite comfort soup?

Stock:
6 chicken thighs, bone-in
2 carrots, chopped
1 onion, chopped
2 celery stalks, chopped
1 bay leaf
3 cloves garlic
8-10 cups water
.
3/4 – 1 cup of short-grain rice
.
3 eggs
1/2 cup lemon juice
1 cup reserved stock
.
Place all stock ingredients into a large pot and simmer for 45 minutes – 1 hour. Strain all the liquid into another pot or remove all the vegetables and chicken.
Reserve 1 cup of chicken stock.
Add the rice to stock and bring to a simmer for 15-20 minutes or until the rice is cooked.
In a bowl, whisk eggs and lemon juice and slowly add reserved stock.
Slowly drizzle in lemon sauce into the soup while stirring.
Shred chicken and add it to the soup. Season with salt and pepper.

Do not bring the soup back to a boil or the eggs will separate
