First time ever doing a brisket, so I realize the trim isn't as good as it could be. Just hoping it still turns out good. Definitely took a bit too much fat off the cap, but there is still plenty to keep it moist, I hope.

    You might have some over cooked crispy bits but you’ll just cut them off. Try and trim it with round edges. YT has some good videos from mad scientist BBQ and chuds BBQ for trimming brisket.

  2. Spray it every so often with 50/50 cider vinegar and water to keep it moist

    Interesting. I use a completely different heating profile for brisket than ribs. Curious to see the results.
