Approximately what I’ve settled on for my first pop-up.

  1. * Potato bun (I spent 6 months baking brioche buns to just go back to potato lol)
    * Caramelized red onions and Hatch fire roasted chiles
    * Queso Chihuahua and smoked cheddar
    * Very thin double smash
    * Green chile burger sauce (Kewpie mayo, Hatch chiles, brown mustard, Worcestershire sauce, cilantro, cumin, smoked paprika, and a dash of Valentina to taste).
    * Squirt of fresh lime over everything

    This is just for fun, I don’t have any huge ambitions, I just know I cook decent burgers that are well received. Breaking even with a good reception would make it worthwhile for me. I don’t get the opportunity to cook for others very often so it’s genuinely entertaining for me and makes me feel good.
