    Guessing this was 383 hanging weight otherwise it was a huge cow weighing about 1900 lbs! Likely 250lbs take home. $4 hanging is a very good price. I sell at $4.50 hanging.

    Serious question. What happens to all the offals (such as the tripes and liver) and bones? Can you get them if you wanted? Did they just throw them out? I’ve been debating on having a whole cow butchered such as you, but I’d also be interested in the non normal parts of the cow. There’s so much can be done with them especially the bones. Such as the oxtail for oxtail stews. Bone for the bone marrow or bone broths.
