    Dough —

    ▢ 1 1/4 cup all-purpose flour

    ▢ 1 tsp salt

    ▢ 4 oz vegan butter, chilled

    ▢ 1/4 cup oat milk, chilled

    Filling —

    ▢ 1 tbsp olive oil

    ▢ 1 large onion, finely chopped

    ▢ 6 oz button mushrooms, sliced

    ▢ 2 Tbsp fresh thyme

    ▢ 1 tsp red chili flakes

    ▢ 1 Tbsp minced garlic

    ▢ 1 Tbsp tomato purée

    ▢ 2 Tbsp cornstarch

    ▢ 1 Tbsp Worcestershire sauce

    ▢ 6 oz carrots, diced small

    ▢ 6 oz frozen sweet green peas

    ▢ 4 oz golden potatos, cubed small

    ▢ 100ml Guinness or stout

    ▢ 200ml vegan beef stock

    Instructions:
    1. For dough — Mix first three ingredients until they resemble breadcrumbs. Add milk and combine until it comes together as a dough. Shape as a disk. Wrap in plastic wrap then refrigerate for 1 hour before rolling out.

    2. Meanwhile, make filling. In a large skillet pan over a medium-high heat, add olive oil. Sauté onions then add garlic, cook for 1-2 mins. Add mushrooms, thyme, red chili flakes, tomato paste, and Worcestershire sauce, Stir to combine and cook until mushrooms are softened, about 4-5 mins.

    3. Add peas, carrots, and potatoes along with Guinness, ‘beef’ stock, and cornstarch. Cook until potatoes are soft and sauce thickened, about another 7-9 mins. Remove and let cool completely.

    4. Preheat oven to 375F. Roll out dough to 1/8″ inch thickness and cut out 6″ inch circles, repeat until all dough is used. Spoon in a scoop of filling (don’t overfill). Fold the hand pie over and crimp edges with a fork. Brush with vegan ‘egg wash’ and bake for 20-30 minutes or until golden brown. Let cool then serve.
