One of my favorite things to make is crispy, fried shallots. Make a big batch in a deep fryer, you get to put the shallots on anything you want and you’re left with like almost two liters of shallot oil. Use the oil for vinaigrettes, noodles like your recipe, my son is allergic to sesame so I sub the shallot oil for sesame oil in any recipe that calls for it. Basically, once you have it on hand, it’s so good you are actively looking for ways to use it in every dish!
