This dipping oil, loaded with Mediterranean flavours, is a surefire way to impress your guests at your next barbecue or dinner party. Simply combine the herbs, olives and sun-dried tomatoes with Parmesan and olive oil, plus some pomegranate molasses for extra tang. Serve it with crusty bread to soak up every last drop.

Ingredients ¼ cup extra-virgin olive oil 2 tbsp pomegranate molasses (or balsamic glaze) 2 tbsp grated Parmesan cheese 2 tbsp finely chopped sun-dried tomatoes 2 tbsp chopped black olives 1 tbsp finely chopped fresh chives 1 tbsp fresh thyme leaves Salt, to taste Black pepper, to taste Preparation

Add the oil, pomegranate molasses and Parmesan to a shallow bowl, and mix with a spoon to combine. Add the remaining ingredients and stir. Serve with bread.

Serves 4 to 6
