Light, bright, healthy Mediterranean style lemon chicken soup!
Full Recipe:
Ingredients
– 1/2 white onion (or more if desired)
– 2 garlic cloves
– 2 stalks of celery
– 2 carrots
– 2 Tbsp olive oil
– 6 cups chicken stock
– 1 cup water
– 2 tsp oregano
– 1/4 tsp red pepper flakes
– 1/4 tsp turmeric
– salt and pepper to taste
– 2 chicken breasts
– 1 cup of rice
– zest and juice of 2 lemons
– fresh parsley for topping (optional)
Directions
1. Preheat a large pot over medium-low heat
2. Chop up your onion, garlic, celery and carrot.
3. Add olive oil to the pot and then add in your chopped veggies.
4. Add salt and pepper to taste and stir. cook the veggies until tender, around 5-7 minutes
6. Add in your chicken stock and water. and add in your 2 chicken breasts
7. Turn up the heat to high to bring soup to a boil
8. While heating, add your spices – oregano, red pepper flakes, turmeric and a bit more salt and pepper.
9. Cook the chicken at a boil for 8-9 minutes.
10. Once the chicken is finished, remove from pot and set aside.
11. Add 1 cup of white rice to the pot. cover. and turn the heat down to medium-low. Cook rice as directed.
12. Chop or shred your chicken and add back into the pot.
13. Once the rice is finished, turn off the heat. Add the zest and juice of 2 lemons and stir to combine.
14. To serve, top with fresh parsley and enjoy!
