I used to see posts about people coping with staying sober through baking and imagined myself doing the same. The last few months have been hell with being homeless, getting sober, leaving a toxic relationship, being unable to drive, etc. but I am finally in an environment where I feel safe and have space/motivation for hobbies. All my previous kitchen supplies were stolen but my birthday just passed and I had the extra money to indulge 😇 I wanted to celebrate my new age, life, home, and being 3 months sober – plus sharing it with my roommates who have supported me!

I think it turned out pretty good but I have little to no baking experience. It sunk a bit in the middle but I think that’s partially because I flipped it onto a plate with a sunken center before letting the cake cool enough. I also disliked the parchment paper with a round pan, or I should’ve put more time into doing it. Tastes amazing though! I’m in the process of enrolling into Culinary Arts so would appreciate any constructive criticism 🙂

    I’ve always used an 8×8 square pan but now you’ve inspired me to make it in a round pan, this looks amazing.

Baking is one of the BEST things to learn because 1) you can start at literally any point in life and it’s not too late, you haven’t missed out on anything, 2) you only keep getting better and better with more experience despite random flops that every baker has lol and 3) you get to eat and enjoy the creation you made! It’s super rewarding!

    Congrats on turning a corner in life and redefining what you want your life to include, like coffee cake! 😍

    Looks so very tasty! Congrats on your sobriety, it’s not easy, but it’s worth it to get your life back.

    For future bakes, a sunken center simply means it hasn’t baked quite long enough. Follow people’s recipes loosely. The recipe author has a different oven than you and all oven’s are different. For bake times, go by feel instead. If you touch the center of the cake gently, it should have a bit of a bounce to it. You can also be sure it’s done by using a thermometer and getting it to 200 degrees F (abt 93 degrees C). Learning to bake from the beginning using your eyes and touch will help your future bakes be consistently successful and that’s important in these times with groceries being as expensive as the are. Let your cakes sit in the pan 10 minutes before putting a rack on top of the cake pan and flipping it with the cake pan as one unit (less chance of your cake breaking apart).

    As for your final thing–parchment paper. You only need a parchment circle on the very bottom of the pan. The pan can be sprayed with pan spray, then stick the parchment down (the oil will make it stick). The sides will release if just sprayed with pan release. Good luck to you and happy baking!!
