    Had to look up dace. Seems with salted black beans is the way to go. I may have to stop in at the huge Asian market in Tucson. One question, how chewy is the dace? One description was “jerky-like.”

    We’re pretty spoiled in the Twin Cities for Asian markets: Vietnamese, Chinese, some Korean and Japanese. I found Moroccan Sultan brand sardines at an Indian market, so you never know what the selection might look like.

    I grew up on these things man, my dad used to get these and just have them with rice for lunch sometimes.
    A popular Cantonese way to use the dace is to cut up the fish and use the oil and spices for fried rice.

    Chinese checking in here- the fried dace is delicious. I only had it sparingly as a kid but there’s still something nostalgic about it. So good over bowl of warm rice.

    Some people like to fry it up a bit in a pan, imo that’s an abomination and I eat it straight from can
