Been loving this meal for the past few months. Great macro diversity, flavor combinations, and color and it gives me great energy to get through the work day and the gym or jiu jitsu!
I preheat the oven to 400 degrees F (~200C). While doing that I lightly pre-spray a Pyrex glass pan with avocado oil and then dump in a 32oz bag of baby carrots.
While waiting for the oven I prep the asparagus by snapping the ends off, spraying a small baking sheet with avocado oil, and then spraying the asparagus lightly before sprinkling with black pepper.
I stick the carrots in the oven, they will be in there for about an hour.
While the carrots are cooking I prep and sauté red/orange/yellow bell peppers and a yellow or white onion. Then in the same cast iron pan I cook a mix of ground bison and ground country style pork. That gets mixed together in a bowl and put off to the side.
When there is about 10-15 minutes left for the carrots I pop in the asparagus to also cook.
I frequently eat this meal with a bit of tzatziki sauce and a small piece of store-bought pita bread for some more carbs and extra flavor. So delicious!

I love carrots personally, and totally diggin the quantity of your carrots per plate!
Don’t eat bison meat myself, nor seen it often here on this group, so that’s cool to see!

This looks absolutely delicious, and the sort of thing I would make, love, make 17 of, and get tired of eating after like 3 servings, try to freeze, forget about, and throw away in 3 months when I find it in the back of the freezer in some unlabeled bag and ask, “Who the..what the hell is this?”
