These no-bake cannoli inspired cookie cups come together with just a few simple ingredients.
Ingredients:
140 g dry cookies (like digestive cookies) – 5 oz
60 g melted butter (1/4 cup)
200 g ricotta cheese (3/4 cup)
1.5 – 2 tbsp tbsp honey
A handful of chocolate chips
1/2 tsp vanilla extract
Instructions:
1. Blend the cookies and melted butter into fine crumbs.
2. Press the mixture into mini muffin tins, shaping it into small cups. For easy removal, use silicone molds or line the tins with paper liners. Freeze for 30 minutes to 1 hour.
3. In a mixer, blend ricotta, honey, and vanilla extract until smooth.
4. Remove the cookie cups from the freezer and spoon the ricotta mixture into each one.
5. Sprinkle with chocolate chips.
6. Chill until set, then enjoy!
