    Instructions:

Crush chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of an 18cm (7 in) springform pan lined with acetate film. Refrigerate.

Soak 25g gelatin in 120ml cold water for the cheesecake filling.

Mix cream cheese, cottage cheese, and sweetener until smooth. If needed, add a bit of cream to help blend.

Whip the heavy cream separately until stiff peaks form.

Heat the bloomed gelatin in the microwave in 10-15 second bursts until liquid. Mix into the cheese mixture.

Fold the whipped cream into the cheese-gelatin mixture gently.

Pour the filling into the pan, shake to remove air bubbles, and refrigerate.

For the jelly, soak 20g gelatin in 120ml cold water.

Prepare the sweetened blue water with lemon juice and food coloring.

Place washed and dried blueberries on top of the set cheesecake.

Heat the bloomed gelatin for the jelly until liquid, mix with the blue water.

Pour half of the cooled blue jelly over the berries. Refrigerate for 5-10 minutes.

Reheat remaining jelly if needed, cool to room temperature, and pour over the rest of the berries.

Refrigerate the cheesecake until completely set.

Remove from the pan, peel off the acetate film (wipe with hot damp cloth for easier removal).

That is a thing of beauty!
(Also your photography skills are great!)

  4. That is gorgeous! I can see how it could be relatively easy (if you’re an experienced baker) but looks time consuming & elegant.

This looks absolutely stunning! That blue jelly layer with the whole blueberries suspended in it creates such a professional finish. The clean layers and that perfect slice are really impressive for a no-bake version.

You’re a really good photographer too.

I love how you’ve used cottage cheese instead of the traditional cream cheese – I’ve been researching dairy substitutions for [bakingsubs.com](http://bakingsubs.com) and cottage cheese is actually brilliant for no-bake cheesecakes since it sets firmly while keeping a lighter texture.

The gluten-free cookie crust with sugar substitute is a great modification too – makes it more accessible for people with dietary restrictions.

Did you have any challenges getting the jelly layer to set without clouding? The transparency is perfect. Also, curious if the cottage cheese gives a slightly different tanginess compared to cream cheese?

Beautiful dessert – bet it disappeared quickly!

This is gonna get a lot of upvotes – looks so pretty!

  9. Tight_Ninja1915

I didn’t know witchcraft was allowed on Easter

  10. princess_kittah

this makes me sweaty with envy and admiration

does it take a long time for the cottage cheese to blend into the mixture? should it become lump-free and smooth?

  11. Biodrone11

OP pulled out a Lego piece and wants us to believe it’s an actual cheesecake.

  12. Plane-Substantial

This almost doesn’t even look real… wow 🤯

  13. passengerv

I would never eat it only because gelatin grosses me out but it looks awesome!

  14. magyar_wannabe

Visually it looks so good! I can’t personally envision myself enjoying the jiggly texture of jello combined with the creaminess of cheesecake but would love to try it once!

  15. Small-Courage1226

Such a stunningly beautiful cake! I bet it tastes amazing too!

  16. Lost_My_Brilliance

it looks amazing, but i would never eat it.

  17. Routine-Instance-254

Gorgeous, but I can’t say the texture of cheesecake and jello make a particularly appealing combination.

  18. 420SexHaver68

This is 1 minor garnish of some sort away from being something that looks so perfect that it could be considered fake or staged for a photo.
    I’m crazy impressed!

  19. u/Tanya_Rozenberg it looks great, but how good does it taste? I am usually not a big fan of no bake cheesecake. Thanks!

  20. hot4minotaur

Honestly thought this was an AI troll at first but wow that’s stunning

  21. Fluff_Nug

Hate the jelly as a textured thought crossing my mind but it’s gorgeous nonetheless and flawlessly executed. 👌 Huzzah!
