Cook ramen and one egg in same pot. Drain the noodles and place egg in ice water then peel. Saute a cup of chopped kimchi in avocado oil for few minutes. Add the sauce mixture which is tbls of each soysauce, sesame oil, and korean hot paste (gochujang), 1/2 tsp of sugar. Then add 1/4 cup of kimchi juice. Let it cook down. Toss in the ramen. Plate, drizzle more sesame oil and sprinkle scallions. Soft egg to balance the heat. Bon Appétit!
