Italian Easter Pie, also known as pizzagaina and pizza rustica, is a hearty and decadent savory pie packed full with cured meats, cheeses and eggs in a buttery crust! It’s traditionally enjoyed in Italian households to signify the end of Lent, and that Easter has arrived! For a really traditional Italian Easter Pie, I show you how to make the pastry crust, but you can also use store bought pastry if that’s easier!

Pastry:
2 1/2 cups (354 grams) flour
1/2 cup (115 grams) (1/2 cup) butter, cold and cubed
1 tsp. (4 grams) salt
1 egg
2 tbsp. (30 ml) extra virgin olive oil
1 tsp. (5 ml) white vineger
Water, ice cold, 1 tbsp. at a time
Flour, for dusting your work surface

Filling:
2 oz. (1/2 cup, 60 grams) salami
2 oz. (1/2 cup, 60 grams) prosciutto
6 oz. (1 1/2 cups, 180 grams) ham, cubed
4 eggs
1/4 tsp. (1 grams) nutmeg
15 oz. (425 grams) ricotta cheese
2 oz. (1/4 cup, 25 grams) Parmigiano Reggiano
8 oz. (2 cups, 226 grams) mozzarella, shredded

Egg wash:
1 egg
A splash of water

    That pie looks so good. I can imagine the flavour of the crust and filling. At the moment, I'm keeping pastries to a now and then treat. So I thought your recipe would still be ok as a crustless or just a light pastry top. I could line my pie dish with parchment paper and add the filling, leaving it to bake as is or add the puff pastry top.

    I'm think this recipe would be great for say six individual, 1 serve pies bakery style.
    Sorry for breaking away from the traditional method, but I was just thinking what would suit me best. Make a whole pie or individuals, round and rectangular πŸ€”
