Cannelloni – 20 pieces
Parmesan – (100g) 3.5 oz / about 1 cup grated
Mozzarella – (80g) 2.8 oz / about ¾ cup shredded
For the Filling:
Onion – 1 medium
Spinach – (450g) 16 oz / 1 pound / about 6 cups fresh, or 2½ cups cooked
Garlic – 3-4 cloves
Ricotta – (300g) 10.5 oz / about 1¼ cups
Vegetable oil – 3-4 tablespoons
Salt – to taste
Ground black pepper – to taste
Béchamel Sauce:
Butter – (80g) 5½ tablespoons
Flour – 3 tablespoons
Milk – (700-800ml) about 3-3½ cups
Parmesan – (100g) 3.5 oz / about 1 cup grated
Salt, ground black pepper, ground nutmeg – to taste
