You will love this crazy-good weeknight dinner!
Pork Marinade
Use approximately 1 teaspoon of each of the following seasonings. Combine with 1/3 cup olive oil and marinate in a ziplock bag in the refrigerator for at least 30 minutes.
Paprika
Salt
Pepper
Garlic powder
Onion powder
Italian seasoning
When ready to air fry, spray the air fryer with a little olive oil and place pork in the air fryer basket. Cook at 365 F until the pork reaches 165 F.
Line two sheet pans with parchment paper.
For sheet pan rosemary potatoes, thoroughly clean small new potatoes and slice in half, skin left on. Toss in a bowl with olive oil, garlic powder,salt, pepper and rosemary. Spread on lined sheet pan in a single layer.
Roast in 400 F oven until potatoes are crispy and cooked through.
For brussel sprouts, thoroughly wash, trim and slice in half. Toss in olive oil, garlic powder, salt and pepper. Spread on sheet pan in a a single layer and roast in 400 F oven until brown and crispy. Add chopped pre-cooked bacon about half way through cooking.
Serve roasted veggies with air fryer pork loin chops. Add a drizzle of balsamic glaze for a bit of sweetness to the Brussels sprouts.
