Ingredients:
Make the active Sourdough Starter:
50g sourdough starter
150g all-purpose flour
150g warm Water
let it rise
Make the Sourdough Croissant Dough:
230g warm water
150g active sourdough starter
450g all-purpose flour
1 tsp Salt
40g Sugar
50g melted Butter
Butter Layer:
250g Butter
1 1/2 Tbsp all-purpose flour
cool 15 min.
roll Butter: 15x20cm or 6×8″
roll dough 20x40cm or 8×16″
fold in Butter layer
first fold 25x50cm or 10×20″
cool for 30min.
second fold 25x50cm or 10×20″
cool for 30min.
third fold 25x50cm or 10×20″
cool for 2 hrs.
roll into 28x60cm or 11×24″
Mark every 2″ or 5cm
create triangles
Proof 4-5 hrs.
brush with water after each 1 1/2 hrs.
preheat oven @ 500 F
egg wash:
1 egg
1 Tbsp Water
brush Croissants
bake @ 400 F for 20min.
