Top to bottom, left to right in my bento
– sour cream
– chipotle copycat corn salsa – white corn, jalapeno, red onion, cilantro, lemon juice
– shredded lettuce (day 4 so getting a lil brown lol)
– refried beans, traditional style straight from the can
– Mexican rice – jasmine rice, chicken bouillon, peas and carrots, tomato puree, garlic, s&p
– enchilada beef – ground beef with cumin, onion powder, garlic powder, s&p, red enchilada sauce can, yellow onion, green chilies
– not pictured, white corn street taco tortilla shredded up and added into the bowl

I made 10 lunches for me and my husband and had a little leftover. The portions were random so I didn't include.

I'm trying to eat out less and meal prep more, and Mexican restaurants and chipotle are my biggest weaknesses so I combined them!
