Chimichurri with Dill, Cilantro, Garlic, and Spinach
A fresh, herb-packed twist on classic chimichurri that’s perfect for grilled meats, veggies, or as a dip.
Ingredients:
– 1 cup cilantro leaves
– 1/2 cup dill leaves
– 1/2 cup spinach leaves
– 3-4 garlic cloves, minced
– 1 small fresh hot pepper, seeded and chopped
– 1/4 cup red wine vinegar
– 1/2 cup olive oil
– 1 tbsp lemon juice (optional)
– Salt to taste
Instructions:
1. Blend cilantro, dill, spinach, garlic, and hot pepper in a food processor until finely chopped.
2. Add vinegar, olive oil, lemon juice, and salt. Blend until smooth.
3. Let sit for 30 minutes before serving. Drizzle over grilled meats, veggies, or use as a dip.
