Ingredients:
2 large eggplants
1/2 cup tahini paste
3 cloves garlic
1 juice lemon
1/4 teaspoon salt, or to taste
2 tablespoons olive oil
Directions:
1. Wash the eggplants
2. Cut small slits all around using a knife
3. Place in the air fryer, oven or grill. For air fryer, roast at 425°F for 25-30 minutes with.
4. Once cooled, place the eggplants in a strainer to drain the water from eggplants for about an hour or more if you have the time.
5. For a quicker way, remove the skin then with a spoon scoop out the flesh then place in a strainer, press down with a spoon to remove access water.
6. Place the eggplant on a cutting board and quickly chop.
7. Place the eggplant in a bowl, add tahini paste, crushed garlic, lemon, and salt to taste. Mix well with.
8. Garnish with olive oil. Enjoy with pita bread or pita chips.
